I am a true noodle lover, and there is one particular noodle I so crave especially on a rainy and cloudy day like today. Hot, steamy udon! Now, let's start with all the ingredients.

I am putting some shrimps and Japanese fishcakes along with onion, carrots, garlic, red pepper and green scallion. You could add a lot more Veges if you want, and replace shrimp with chicken or beef.

Boil 2 cups of water in a pot. Meanwhile, chop all the vegetables and set them aside.

You could use any Japanese style udon noodle. Keep the rest frozen. When cooking, just take the noodle out about 5 minutes before and it'll thaw naturally.

This is the soup base sauce I'm going to use.

Once water boils, put all the Veges in except green scallions.

Then add 3 tbsp of soup base for udon

Finally add the noodle and green scallions. Boil on high for about 2-3 more minutes.

I like my noodle always spicy so I'm going to put some black pepper, and red pepper powder.

Meanwhile I chopped some roasted seaweed which I'm going to add in the noodle at the end.

Finally add roasted seaweed and some sesame seed. It's all ready now. Yum!
